Celebrate with a Cupcake

Sunday developed into a classic Sydney beauty, blue sky, a fresh brisk breeze and warming sunshine. What do I do on a perfect day…….celebrate by making cupcakes!

This recipe is from a wonderful friend – the best cook I know in Mudgee!

Cupcakes

1 and half cups self-raising flour

2/3 cup caster sugar

125g softened butter

3 eggs

1/4 cup milk

Beat all the ingredients for 4 minutes until smooth. Spoon into 12 muffin cases. Bake 180C for 18 -20 minutes. When cool, ice with butter icing.

Butter icing

2 cups icing sugar

3 tablespoons soft butter

2 tablespoons hot water

Decorated CupcakesHand in a cast makes cupcakes difficult to eat!How are you going to manage Emily, with a full arm cast? Oh, I’m not that cruel – I told her they weren’t any good.
