SCI healthy diet choice – Carrot, Pistachio, and Coconut Bread
Total time: 40 minutes / Serves 12
¾ cup all-purpose flour
¾ cup wholemeal flour
1¼ tsp cardamom
1 tsp baking powder
½ tsp baking soda
Spice – 1 tsp cinnamon, 1/3 tsp of nutmeg, ginger and ground cloves
½ tsp black pepper
¼ tsp kosher salt
½ cup coconut oil, melted
⅓ cup honey
3 lg eggs
¼ cup buttermilk
1½ cup grated carrots (about 3 med)
½ cup chopped pistachios
½ cup unsweetened coconut flakes
1. HEAT oven to 350°F. Lightly coat 8″ springform pan with cooking spray.
2. WHISK first 8 ingredients in a large bowl. In another medium bowl, stir oil, honey, eggs, and buttermilk until combined. Gently pour the wet mixture into flour mixture. Fold in carrots, pistachios, and coconut.
Pour into pan. Bake until wooden pick inserted in center comes out clean, about 30 minutes.
3. REMOVE from oven; cool for 20 minutes. Remove from pan, cool completely. Eat!
