I love it when I’ve prepared dinner before noon. It’s all about vegetables today as we need something light, quick and delicious.
I prefer steam cooking as this method retains the nutritious value in foods, especially vegetables. I’m dry roasting the sweet potato in the skin.
Sweet potato with a variety of greens on a bed of fresh spinach, add feta cheese with a little oil from it’s jar, salt and pepper. Simple, fast and deliciously healthy.
Being prepared leaves me free to get on with the day. Emily’s air mattress has popped so we need to organise a repair. A timely fix would be wonderful because the mattress is deflating before our eyes!
Prior to being an everyday carer I wouldn’t have realised the constant maintenance demands placed on the differently-abled. It certainly makes for busy days when equipment spits the dummy. If only everything could be managed like a good meal.
With experience I realise I need a coffee, a few good deep breaths and a smile, hay ho It’s not raining!
